Cut from the shoulder, the Flat Iron Steak provides the wonderful combination of rich beefy flavor and a tender bite that only a Tenderloin steak can rival. Simply sear for 5-7 minutes per side (reach an internal temperature of 130 degrees) for medium-rare eating perfection.
